Around the world, decanter centrifuges are transforming the way wine is made. This continuous and closed system is used both for gentle grape juice extraction and for the efficient processing of lees — delivering impressive results in quality and yield.
For winemakers and producer cooperatives, the technology opens up exciting new possibilities. While most still rely on conventional pressing systems such as tank presses, these traditional methods have their limits. Because they operate in batches rather than continuously, they can slow down production and make process control more difficult.
Decanter technology offers a smarter alternative. By enabling continuous grape processing, it combines efficiency with gentle treatment of the product — a key advantage in preserving flavor and aroma.
In other areas of food production, like fruit juice or olive oil processing, decanters have already become the standard. Now, the wine industry is following suit. Countries such as South Africa and those in southern Europe are leading the way — and it’s only a matter of time before more winemakers fully embrace this innovative approach.
For winemakers in weather-sensitive regions, the decanter is the clear choice for reliable and efficient processing.
Decanters are highly versatile — take Hiller, for example, a manufacturer that provides decanters for both grape juice extraction and lees processing to its customers. The main advantage of using decanters for grape processing lies in their speed and continuous operation.
This makes them particularly valuable in years with early harvests and high temperatures, where rapid processing is crucial. By handling grapes quickly, decanters help prevent potential quality issues, including microbiological problems, ensuring a consistently high-quality wine.
At Hiller, customers also benefit from significant economic advantages. Processing grapes with a decanter is gentle yet highly efficient, delivering very high yields while minimizing lees content. The resulting must is therefore of premium quality. The decanter also streamlines operations, reducing the time needed for loading and interim cleaning. Thanks to the closed system and automatic CIP (clean-in-place) cleaning, hygienic standards are perfectly maintained.
Overall, the handling of the product — including storage, transfer, pumping, and processing — is greatly simplified, as are the time requirements for pressing and enzymatic treatments. Hiller’s closed-system decanter, equipped with an adjustable disc, runs very stably, is highly flexible, and ensures excellent hygiene. The rapid juice extraction in the closed system minimizes oxidation, allowing the juice to be transferred directly from the decanter into tanks without the need for additional pumps.
The same decanter used for must extraction can also be used for flotation lees processing. Within a very short time, juice is recovered from the lees without the use of additional filtration aids. Thanks to automatic CIP cleaning, the system can immediately be switched back to grape mash processing. The handling is remarkably simple and efficient.
Hiller offers complete solutions for both wine and juice production, combining efficiency, quality, and flexibility in a single system.
